Have been fooling around with Paleo for about a year but never seriously committed. Started the 30 day challenge Monday, July 9th. So far:

Monday - I scrambled for lack of planning on my part Sunday -

2 hard boiled eggs

Unsweetened green tea

Cranberry trail mix type stuff (i am thinking this is a no-no) -- cranberries, almonds, golden raisins, sunflower kernels & pepitas.

Baked chicken breast pieces w/ celery, onion, carrots, seasonings

Tuesday - 7/10

8am

2 meatballs (italian ground sausage, ground turkey, spinach, carrots, celery, onion, garlic, chili hot sauce, S&P, eggs, ginger, seasonings)

Cucumber slices

Unsweetened Tea

Noonish - Left over chicken breast pieces & green beans

Watermelon

WOD - 6:30pm

After workout -

Still working on finishing up that chicken! :rolleyes:

Broccoli roasted w/ bacon

watermelon

Wed 7/11

8am - 1 boiled egg, 2 meat balls, unsweetened green tea

Noonish - Salad w/ 6ox beef filet - mixed greens, roasted peppers, olives, carrots, tomatoes, balsamic dressing

6pm - left overs - chicken, broccoli, green beans, watermelon

Thurs 7/12 -

So far -- 3 meatballs, small apple, unsweetened green tea

Hit and miss day due to a CrossFit competition (volunteering)

4 meatballs

carrots / celery / cukes w/ smashed up avocado & salsa mix

apple w/ almond butter

2 boiled eggs

*I feel like I am missing something but can't remember

Sunday 7/15/12 One week down!!! yay!

2 eggs w/ salsa, tomatoes, avocado

3 meatballs

6 (no sauce) wings

Blasted broccoli

(no nearly enough food but just wasn't feeling hungry)

Monday 7/16/12

Egg Frittata (broccoli, chicken, peppers)

Cantaloupe

Lunch:

Tuna / avocado / celery / tomatoes / mustard

Snack:

Apple w/ almond butter & handful nuts (almonds, cashews, macadamia)

Dinner:

Pork Loin, 1/2 Sweet Potatoe, Blasted broccoli

Monday 7/16/12

Tuna / avocado / celery / tomatoes / mustard

Snack:

Apple w/ almond butter & handful nuts (almonds, cashews, macadamia)

Dinner:

Pork Loin, 1/2 Sweet Potatoe, Blasted broccoli

I keep forgetting about the apples I bought. Thanks for the reminder. :)

PS...Did we eat the same lunch and dinner??? LOL!!

I love a Jimmy John's Unwich, but I was worried about the quality of the meat and it's potential nitrates and nitrites. Of course, I usually get mine with Mayo back in the day, so I'd need to bring my olive oil mayo along.

Hoping to one day work up to adding crossfit as I see you do. :D

Thanks Hobbitgirl! I am doing the best I can on nutirition and it sometimes is a challenge especially when I come to work unprepared - so the best choice might not be as good as I can get home, but certainly better than the sub w/ bread - right?

I finished up Friday with a salad w/ grilled chicken and then for dinner - some more chicken and brussel sprouts.

Saturday - great 1/2 day of hiking -

before - a couple of boiled eggs

After hike - in no order -

chicken salad made w/ mustard, cranberries, pecans, celery

apple

nuts

dinner was grilled chicken and 1/2 a sweet potato

Sunday -

bacon & eggs

chicken salad w/ cut up veggies

coconut shrimp

salad.

Monday -

AM -

Firttata

Cantaloupe

***I am reviewing my log and clearly, I am not eating enough veggies!***

Great job! Your meals look good overall, but on some you don't add any healthy fat. Especially in the morning. In the book they always state the morning meal is the one you can splurge on so don't be afraid. :) I tend to add olives, a little ghee, mayo, avocado, etc. it will help with your hunger, may help reduce your snacking too. Just a suggestion. ;)

Thanks Laura! I will up the anty on the morning fat - love that idea! Who doesn't like olives or avocado with eggs? mmmmm

**aarrgh!!!** Something in that salad did not sit well ..... feeling poorly all evening -

managed to get down some grilled chicken and 1/4 sweet potato

I have not kept up very well w/ my food over the weekend but this is what I can remember --

Totally skipped breakfast and didn't eat till after 1pm - not a good thing....

1ish - Spinach salad w/ grilled chicken

Dinner - Mexican Chicken soup (paleo recipe)

7/29/12

egg w/ chicken, peppers, broccoli

again - skipped additional food most of the day - working in the yard & house

7:30 -

grilled salmon

grilled prosciutto & basil wrapped peaches

asparagus

2 glasses Chardonnay (so good!)
