BACON: can I use unapproved bacon for cooking collard/turnip greens?

I'm on day 8, trying to cut out carrots and sweet potatoes for more greens. I'm growing a little old on cabbage and asparagus (or the way my house smells from cooking them. I would really like to have some collard/turnip greens. However, I need a meat for flavor to make them edible (for me). I don't like fatback. Can I use unapproved bacon or ham (like Thanksgiving ham)?

I have done things like cook a bunch of collards with a Boston butt pork roast in the slow cooker and been very happy with the results. Collards are tough enough to hold up to slow cooking, but you might prefer adding them after the pork has had 2-3 hours of a head start cooking.
