JosieJake
I want to make mayo. The recipe in the book says light olive oil, not extra virgin. So is this light virgin, regular virgin, or none of the above. I have several kinds of oil including avocado. What can I use instead.
GFChris
Use any compliant oil other than extra virgin olive oil, because the taste in the mayo is too bitter. So light or extra light olive oil works, and some folks use avocado oil or macadamia nut oil.
Physibeth
I've also used walnut oil and some folks use coconut oil. Just a note on avocado oil, make sure your oil isn't green. If it is it will be SUPER strong. Basically you need a more refined oil trying to pick from types that use a non-chemical refining process. lcdak
I have a Wegmans here and I use their Pure Olive Oil or Light Olive Oil. I haven't tried using any of the other oils they suggest but this stuff makes KILLER mayo! I've used it to make ranch dressing as well. I will never go back to conventional condiments ever again. My 2 cents.
