Becky1979 Posted April 3, 2015 Share Posted April 3, 2015 Happy Easter everyone! Just wondering how long I can keep cauliflower and squash mash in the fridge once I've made it. If I do a big batch on Saturday, would it be ok to keep until Thursday? I'm thinking I'd like to make a big batch at the weekend and take portions out as needed during the week. Oh I should probably say, I just steam the squash and cauliflower and then puree it in the Magimix. No oil or ghee or anything - I like it best that way Any thoughts/experience welcome! MTNan Posted April 3, 2015 Share Posted April 3, 2015 I always do prep and batch cooking on Saturday or Sunday and things last until Thursday or Friday. I have to say I've never precooked cauli, though. If you're really concerned or if you notice any problems, you could always freeze in single serving containers, and pull out of freezer to the fridge the night before or in the morning to eat that day. Since you're talking about a mash/purée, you wouldn't have to worry about a change in texture which would be a concern for cauliflower florets.
