letsgiveitago Posted June 13, 2015 Author Share Posted June 13, 2015 Whole30 Pumpkin Breakfast Pudding2 cups coconut milk1 can mashed pumpkin1 ripe bananacinnamon or pumpkin pie spicesalt1 tbs. coconut oil, melted3 tbs. almond mealPreheat oven to 350. Heat coconut milk in a medium saucepan over medium-low heat. Add pumpkin and banana. Cook for a couple of minutes, mashing up banana (you can also use an immersion blender, which I did). Season to taste with cinnamon or pumpkin pie spice and salt. I was debating making this... thinking it might be SWYPO.. Pumpkin pudding. on a whole30 blog, but maybe it shouldn't be. So I made it, realized I put sulfites in it, waited a day, fed some to my 10 month old, and stuck it in the freezer. It's SWYPO.Always, always, always check that recipes in blogs are compliant - they are not answerable to anyone but themselves.If you ate it any of it read the link Chris provided for you in the post above & let us know what you decide, but going forward whether it's day 1 or day 21, stick to the recommended meal template of 1-2 fist sized servings of protein, 1-3 cups of veg, and 1-2 thumbs of fat (or a handful of olives, dollop of mayo etc.) Link to comment Share on other sites More sharing options...
