Lisalove
I just made the yummiest caramelized onions in coconut oil. They came out so sweet. Just heat up heavy pan on medium add a tbsp on coconut oil and a sliced onion or two turn down to Med low and let it go for 30 min stirring occasionally until it's golden brown. So sweet and yummy. I made a batch and put it in the fridge and I just get a spoonful to put on scrambled eggs or toss it into some roasted Brussels sprouts. Maybe top some mashed cauliflower. I hope this fit's in to the whole 30 because it is making me happy.

Moderators Tom Denham Posted May 5, 2012 Moderators Share Posted May 5, 2012 Oh that sounds good. And I love the idea of making a batch and then getting a spoonful as you need it for different dishes.

Johnny M
the coconut onion mix is amazing...i like to add crushed tomatoes to it and use it as a sauce. I don't love coconut oil with everything but it really brings out the sweetness in onion and tomato!
