Enchilada Casserole

Made this last night.  Loved it.

I often find that certain Mexican and Italian recipes leave me disappointed because I know they'd taste much better with cheese.  BUT this one... nope.  Didn't miss it at all.  And I would say the 8 servings mentioned in the comments section... maybe 4.  Unless you are feeding small children.  We served it with cilantro-lime cauliflower rice (yes more cauliflower) and guacamole.  

 

The only thing I did different was to saute some onions and then brown the cauliflower a little before adding it to the casserole.  Next time I'll skip that step and see if it matters.

Made this last night and it was excellent. I made it exactly like the recipe and think your idea of browning the cauliflower before would make it even better. Used your idea of topping with guacamole! Husband loved it. Thank you so much for sharing!
