Pork and salt. yeah... in my mind it was going to be a lot better I had this with the compliant bacon I had the other day too... just wasn't as good as I'd thought it would be... so I'm just going to give this a miss from now on. (my friends raised pigs) That's the "problem" with introducing quality into your life - once you've had the good stuff, the sub-par choices are just not the same. I slice the less-than-stellar prosciutto into thin slices, throw it on top of a bed of greens and raw veggies, add a TON of ground black pepper and some EVOO/balsamic and call it lunch. Roger Barton Posted January 8, 2013 Share Posted January 8, 2013 Try to always get Prosciutto de Parma. Is the best and its great with eggs. I lay a few warm slices on a bed of spinach and a few poached eggs, yolk barely cooked and it is yummy. Add a roasted tomatoes and you have heaven on plate. Also like it with pork belly too.
