Sauce Recipe Help

Hi! 

My favorite sauce for chicken (Piri Piri) has the following ingredients and because it's mostly hot peppers, without something sweet it would be unbearably spicy. What would be an accept sugar sub here? Dates? Do they add a flavor? Note too that this sauce doesn't get cooked at all (if that makes a difference). It is just blended together. 

 

Blend together: 

  • 2 tbsp sugar
  • 8 Fresno chilies
  • 2 cloves garlic
  • 1/3 cup lemon juice
  • 1/4 cup red wine vinegar
  • 1 cup cilantro leaves

There are some whole30 piri piri recipes out there, you could Google and see what other people do.

You could try it without the sweetness and see what it's like -- this might work best if you did diced or shredded chicken in a baked potato or sweet potato, so you've got that to help with the spiciness. Dates could be an option to add sweetness, they might change the flavor a little but probably not too much, or a bit of apple juice, although that would thin the sauce and you might have to cook it to reduce it some. Or you could cut back on the peppers to help reduce spiciness, or if you don't already, be sure you deseed them and remove the ribs inside them.
