Myka Posted June 24, 2012 Author Share Posted June 24, 2012 I eat it as a vegetable. I boil it (peel first and remove the hard middle) and allow it to cool down. I like it best cold out of the refrigerator. Then just season with olive oil, lime, salt, and cilantro. It is also great with olive oil, red wine vinegar, garlic, and red onions.
