raptah
I took sizable pieces of coconut and sauteed them with a little olive oil and spices (oregano, cumin, salt, pepper, and garlic powder). I later am wondering if this is 30 approved? Of course I know the oil is and many other coconut products, so I imagine it is, but being a newbie I just wanted to make sure. Talk about a calorie dense snack! We just had a couple pieces with dinner. Tasty.
amberino21
I can't see why not - considering you're allowed dessicated/shredded coconut, which is just dried meat
GFChris
It's listed as a good saturated fat source in In Starts with Food, and in the meal template, so it counts toward your meal's fat servings. Serving size is 1-2 open (heaping) handfuls.

Bet
YES! fresh coconut is great. If you have a hunger pang, just eat a tiny bit and it will tide you over. It's a fat, so it's neutral as far as sugar rush goes. I never thought about sauteing it...I will have to try that.
beachchica
Sounds delicious (and approved as far as I know). For my typical breakfast, I've been sautéing kale and dried coconut in coconut oil with a couple of eggs. So yummy and filling!
