Meg Hamilton
We picked up some rabbit at the farmer's market on Saturday and I'm either going to make it this week or over the weekend. It came with a basic recipe info sheet and I did find a paleo rabbit cacciatore recipe online yesterday. Just wondering if anyone has tried rabbit and has any tips? Like what it goes well with, does it act a lot like chicken when you're cooking it, etc. Thanks!! This is the recipe I found yesterday: http://paleocomfortf...bit-cattiatore/
AmyB
I have never cooked it myself, but the one time I did eat it, it was lightly breaded (pre-Paleo days ), briefly pan-fried, then cooked in the oven. I'm not sure of the exact process, though. I do know that it was delicious, juicy, & flavorful. A bit like dark meat chicken, I suppose. Here is a recipe I want to try when I get some rabbit: http://paleomg.com/rabbit-apricot-skewers/ - I have made several of Juli's recipes and they have all been delicious. Let me know how it goes if you try it!
Meg Hamilton
Amy that picture of the rabbit-kebabs (rab-babs?) look so good!!! My husband hates fruits & meats mixed together, so that limits my cooking options a bit I wonder if I could just put some onions or veggies on a skewer & grill them. But I will remember that marinade, minus the honey of course. Thank you!

hobbitgirl
The general rule of thumb with rabbit is: Anything you can do with chicken, you can do with rabbit. So, look at all of the chicken recipes, and replace with rabbit.
Meg Hamilton
Wow! Thanks everyone!! I'm more excited to try rabbit now! I had it once as a girl when my family went to Colonial Williamsburg on vacation. I had rabbit stew for the first and only time.
