AceOfSwords
Question about making the ketchup recipe from the book (I can't remember the page offhand). The recipe calls for apple cider (in addition to apple cider vinegar), but the only bottle I could find was really big and probably much of it would have gone to waste. I found some cans of compliant apple juice (apple juice from concentrate and water) that are pretty close to single serving for this purpose. Can I use the apple juice and have it turn out properly? jmcbn
I've never made it personally (I'm not a lover of ketchup) but that's probably what I would do since all of our apple cider here is 'hard'.... Good luck!
Cathy125
Hmmm - - Wondering if subbing plain Kombucha would be an option. It reminds me somewhat of apple cider and I will have a virtual supply once my continuous brewer is up and operating....
Moderators Tom Denham Posted September 1, 2016 Moderators Share Posted September 1, 2016 You will need apple cider vinegar or some kind of vinegar to get a proper bite from the ketchup. Kombucha would not be strong enough to sub for ACV. Apple cider or apple juice will work to add sweetness.
Cathy125
Hi Tom, Maybe I wasn't clear - not subbing the kombucha for the ACV but, for the apple cider.. Do you think that Kombucha would be a good sub for the cider? It seems the only time I can find cider in this area is in the fall..
AceOfSwords
Thanks for the info everyone. I'm going to try making meatloaf tonight and that type of thing normally needs ketchup for me.
