kirkor Posted January 7, 2017 Share Posted January 7, 2017 meatballs/meatloaf chicken or tuna or egg salad with homemade mayo (or combination thereof) sweet potatoes are good cold roasted chicken (drier prep seems to hold up better as cold leftovers than wet) guacamole + protein Also, I may be weird this way, but I hardly ever heat up any leftovers. C_Cezeaux Posted January 7, 2017 Share Posted January 7, 2017 Roasted root vegetable, diced meat, with honey made mayo base or avocado base makes a great chunky protein salad. Sometimes I throw in some nuts as well. I also like to make mini quiche, which I'm fine eating cold. :-) In hot weather, I ended up making cold soups with a pureed cucumber base.
