Runnermama
I've been totally obsessed with roasted veggies since starting whole30 but on a whim today I shredded some sweet potatoes and cooked them in ghee. It was so good. What other veggies can be shredded and pan fried to make this a little less carb heavy? I'm thinking I could add grated onions, carrots....what else? Blanking on veggies that would lend themselves to shredding or grating.
jmcbn
Not necessarily shredded per se, but last week I stir fried a HUGE batch of carrot, sweet potato, spring onions, mixed peppers, bean sprouts, mushrooms, & cabbage - they seem to work well as a base with pretty any protein I've tried so far. laura_juggles
Shredded zucchini would lighten it up
TryingOver
Any root vegetable would work well (parsnips, for example) or squashes (like zuchinni, summer squash, etc).
