Hash browns

I saw at the grocery store that all the hash browns have sugar so I bought a bag of potatoes to make my own, which I am doing as we speak. I am noticing they are turning color before I can even get them in the freezer.  Wanted to shred some for future use.  

Any suggestions as to what to add to keep them from turning brown or pick before I put them in a freezer bag?

Google freezing hashbrowns, I turned up a couple of different methods. I've never done it so I don't know if one is better than the other, but you could pick the one that seems reasonable to you, or split everything in half and do some by each method and see which turns out better.
