Prosciutto, Prosciutto, Prosciutto

I bought prosciutto today from Trader Joe's, and the ingredients say: Pork, salt. I don't see any nitrates in the ingredients but then again it doesn't specify nitrate-free. What am I doing with this delicious savory treat? Go or no-go?

Is this to be treated like bacon?

I eat a lot of prosciutto on a Whole 30! If it is supermarket quality I fry it and eat it crispy. But I have found an amazing Italian brand, Principe Fresco, prosciutto di San Daniele and it is so amazing I just eat it fresh. Very handy that way too.
