We can talk about how much to eat, what to eat, etc. I appreciate your curiosity, but our purpose here is to talk about the Whole30. I am concerned that the question of what glucose levels are ideal is a bit outside our expertise and mandate. Zoodles Posted March 10, 2013 Share Posted March 10, 2013 I think lower circulating insulin levels rather than lower blood glucose levels is probably what's beneficial. You need a minimum glucose concentration in your blood for your brain etc to function. Your body will maintain your blood glucose levels within a very narrow range no matter what you're eating by secreting more or less insulin and glucagon. Less starch/carbs/sugar etc means less insulin needs to be secreted to maintain your blood glucose levels within an ideal range, which is a good thing.
