little_muffin
I'm doing something wrong I'm sure. A can of coconut milk, in the food processor with the whisk setting and blitz...for ages....nope, still like liquid. I hear about yoguurts and all sorts made but I can't seem to get there. Any chefs out there who can lend a helping hand? My children won't drink it so trying other ways to get it into them
MelliebuStacey
Milk frother? I know they're like $10 and work wonders; however, I usually just put CM into my coffee (or, y'know, drink it straight from the glass jar when no one is looking... ) KB makes CM lattes with foamed coconut milk; perhaps she can chime in an answer?! kb0426
Coconut milk in can in refrigerator overnight. Pop into freezer for 15 minutes prior to whipping. Scoop ONLY the solid white coconut. A little of the liquid milky mix is okay. Whip for 7 minutes. Tada!

But you have to sprinkle and grate the rind very quickly, while "no one is looking" lasts.
