Sunflower lecithin vs. "less than 2%" carageenan

Specifically, re: almond milk. Haven't found any almond milk that's just almonds + water. If the choices are sunflower lecithin or "less than 2%" carageenan, which is the lesser of the evils?

There really is no such thing as a lesser of two evils. You can make your own with almonds. Is this for your coffee? Most use canned coconut milk because it's easy to find. I have never made it, but lots of people here have.

Also, sunflower lecithin is not off the table during a Whole30. It's not your best choice, but it's legal.

Oh thats right!!! I keep thinking all lecithins are bad but just soy lecithin is prohibited.

I would like to see what else is on the ingredients list though because I don't remember anyone finding a compliant one. Maybe my memory is failing me.
