I did something similar and it was SO good... boiled cauliflower and sauteed leeks, blended together, mashed with sweet potato - season with CURRY powder... sprinkle of garam masala.. delicious. HollyBW Posted November 17, 2013 Share Posted November 17, 2013 I have been shredding sweet potatoes, tossing with a little olive oil and sea salt then cooking them in a Belgium waffle iron for breakfast. SO GOOD! They get a slightly caramelized and crisp edges. A lot better than regular hash browns! I shred a bunch of sweet potatoes in a food processor and just keep in zip lock in fridge so they are easy to prepare in a.m. P.S. Cauliflower mash is my go-to as well.
