eatprayrun Posted January 3, 2015 Share Posted January 3, 2015 So I know bacon is recommended but I wanted to use half a slice for a little flavoring in a recipe and I have Costco Kirkland bacon. The only ingredients are: pork, water, salt, sodium phosphate, sodium erythorbate, sodium nitrate, smoke Is this compliant? I am not sure about nitrates. I know bacon isn't something I should have often (some might say at all) but If this bacon is compliant I would like to use it at a minimum. I know it isn't the most ideal choice so I am going to try to stay away from it, but it's nice to know there is a kind I can have or add a little to recipes. ladalton Posted June 4, 2015 Share Posted June 4, 2015 I am only in my first week, but I have found that using prosciutto or slice serrano works well as an accent. Two reasons: 1) it's more expensive, so you won't use much of it, and 2) it's less fatty, so you are actually tasting the meat.
