fitgirlH
I saw a canned coconut milk at our grocery store, I am on the constant look out for coconut like with no additives as I read this is hard to find...this particular brand has 60% coconut extract and water... Now I am wondering do they mean coconut extract like what you would use for baking (artificial) or coconut milk extracted from coconuts? Whatdo you guys think? Moderators Tom Denham Posted October 10, 2012 Moderators Share Posted October 10, 2012 I would look for another brand simply because you are buying something that is 40 percent water with that brand. Good coconut milk is the liquid contents of a coconut with a little guar gum as a preservative.
fitgirlH
Ok that's great, thanks Tom! I was under the impression that guar gum was a no-no.
Robin Strathdee
Guar gum is fine as an additive, but I prefer my coconut milk without (I like mine to separate and harden).
Delaine Ross
And while we are on the topic... don't get "light" coconut! It's a rip off. They just added water to regular coconut milk. If you want "light" coconut milk because of a taste preference, just add water to your regular coconut milk and save some $
