HMH Posted November 8, 2017 Share Posted November 8, 2017 So I made the mayonnaise recipe with high-oleic sunflower oil, egg, powdered mustard, and lemon juice. I'll work at room temperature, I use my KitchenAid mixer, the emotion came out good but the flavor is super bitter and metallic... the oil is expensive, I can't afford to throw it away Link to comment Share on other sites More sharing options...

It shouldn't have any real flavor at all, and definitely should not taste bitter or rancid. If it does, there's really no way to make mayo from it that tastes good, and you might ask at the store you bought it at about their return policy for it. As for fixing the batch you have, it's really going to depend on how bitter it is. You could try mixing hot sauce with it, or herbs to make it more like a ranch dressing, or garlic.
