Brad Hefta-Gaub Posted January 30, 2013 Share Posted January 30, 2013 Today is day 30 of my Whole 30. I don't plan to go back to eating legumes. But my family loves mexican food. And so I'm looking for a "substitute" for "refried beans"... I was thinking something along the lines of roasted eggplant puréed with hazelnuts, some spices like cayenne, paprika, and cumin... Your spices are a good start. When I used to make my homemade refried beans, I include that three plus some chili powder, along with onions and garlic, saute and mash them in with the eggplant. Brad Hefta-Gaub Posted February 8, 2013 Author Share Posted February 8, 2013 Ok. I did it. I made my Paleo Refried Beans. To make these "Beans" I roasted eggplant, and butternut squash. I mashed about 1/4 cup of each and added 1 Tbsp of almond butter. I added salt, pepper, cayenne, and paprika to taste. They really tasted a lot like refried pinto beans!
