Almond flour

I've read other posts saying this isn't technically paleo-fying a dish unless you are addicted to fried chicken and just trying to substitute a healthier version of an off-plan food. I personally use almond flour or coconut flour to lightly "bread" things...

lots of health food stores sell it. I've made my own by pulsing almonds in a food processor. As it becomes fine, put it through a flour sifter. Whatever doesn't fall through goes back in the food processor to further grind it. Don't grind too long though...that's how you make almond butter. It's kind of a pain but i've done it in a pinch.

I get mine from Honeyville Farms and nuts.com. Elana, of Elana's Pantry (elanaspantry.com), is the goddess of almond flour and she likes these and a few others better than Bob's Red Mill because they are not only blanched but also finer.
