loubee
so my butcher has started offering pork caul fat (free range) which sounds like beef dripping (tallow) but for pork - does anyone know if this is right? Is it compliant? always nice to have a new source of fat! http://www.godfreys.co/pork-caul-233-c.asp

loubee
For those of you in the UK they do nationwide delivery and are very good!
SpinSpin
Caul isn't drippings, it is a thin layer of fat--I believe it comes from around the outside of the stomach--and i have a Chinese cookbook that has a recipe where you wrap meat in caul before you cook it--always has sounded so yummy but I haven't been able find caul. Lucky you! I say go for it!!
Roz Griffiths
Faggots are traditionally wrapped in caul fat to hold them together during cooking For those outside the UK, especially those of you in the States, perhaps i should point out that faggots are a kind of large meatball, usually containing liver & served with gravy. Yum yum.
