Delaine Ross Posted August 3, 2012 Share Posted August 3, 2012 A college friend and I had dinner planned for weeks and I talked her into a local, grass fed, farm to table burger place. I called ahead and asked what I thought were all the right questions and settled on a bunless burger with one of the toppings being pickled vegetables. I swear they tasted like they had a bit of sugar in them. I'm on day 5 and I really don't want to start over from a vegetable mistake. Verdict? Moderators Tom Denham Posted August 3, 2012 Moderators Share Posted August 3, 2012 I pickle vegetables with 2/3 apple cider vinegar and 1/3 apple cider. The cider provides the sweetness. Cider is a bit expensive, so commercial kitchens are much more likely to use sugar. I might not start over because of the potential of sugar in the pickled veggies, but it is a good reminder to ask about sugar in pickled foods. daisydaisy Posted August 29, 2012 Share Posted August 29, 2012 I'm a big fan of pickled cucumbers - the label just says "cucumbers, salted brine, spices", so I assume this is ok? Susan W Posted August 29, 2012 Share Posted August 29, 2012 Bubbies pickles (found in the refrigerator section) have no sugar or preservatives. Plus they are delicious. High in salt, but that doesn't seem to affect me. They are delicious along side a beef patty or steak and delish chopped up in a tuna salad.
