MTNan
So I have a monster size bag of broccoli from costco, I buy one every other week or so. We steam it a lot and eat it with ghee and some type of seasoning; or occasionally I will roast it. But- I'm bored with it! Does anybody have any good ideas on how to cook broccoli to keep it interesting?
Moderators ShannonM816 Posted June 14, 2015 Moderators Share Posted June 14, 2015 I've made this Sweet & Salty Broccoli Salad before and liked it, if you can find compliant bacon. I blanched the broccoli first, rather than leaving it completely raw, but I'm sure it would be fine raw too.
Administrators ladyshanny Posted June 14, 2015 Administrators Share Posted June 14, 2015 I toss that costco broccoli with some olive or avocado oil and some cumin and paprika, roast it and then squeeze it with some lemon juice when it comes out of the oven. I have always liked broccoli, but since I've discovered Brussels spouts, broccoli has been overlooked. I would blanch the broccoli first, too. JenX
If you're in a pinch to use it up, I know a tasty broccoli soup recipe: http://www.popsugar.com/fitness/Vegan-Creamy-Broccoli-Soup-Recipe-28511869 obviously, need to sub the rice milk. I use more veggie stock, or chicken bone broth and then some coconut milk to add the creamy factor.

tinman57
I have to say that I hate broccoli florets but love broccoli stems. So I'd use the florets to make a nice broccoli curry soup. The stems I shave a little off the outside (vegetable peeler) then put them in a pan with olive oil and water and let them cook until they're tender. MrsMarks
I broil mine with a little bit of olive oil and gralic salt - Or whatever seasoning I feel sounds good. It stays fairly crisp but is sure delicious when it gets browned.
