Tomorrow’s IOD is – FISH SAUCE! Awwww yeahhhhhhh.

 

This tasty condiment is to be embraced and not feared. Its something that you won’t even know is there, EXCEPT for that certain savory umami je ne sais quois that it adds to your meal. If you love Thai food – that’s fish sauce you’re lovin’ on.  Work it!

Hi, all. Well, made it through an entire day at work... Yay! And I don't feel as bad as I did yesterday at this time. Food changes today: added white potatoes to meal 1 (two eggs, potatoes, sausage patties (compliant), one tiny orange. Meal 2, at work: little bits of lots of stuff: cold sliced chicken, salsa (compliant), taco meat (Well Fed 2) with lots of spinach in it, plantain chips (compliant), 2 tiny oranges (clementines, that's what they are called... couldn't remember!), water. Heading home now.

Reporting out on the spaghetti squash carbonara: taste was terrific, but I think you need some cooking skills/intuition to pull it off.  I'm sure if Rick made it, it would have been perfect!

 

The consistency was more like scrambled eggs. I had a feeling that was going to happen, but I really didn't know how to stop it. 

 

I did eat it, and would definitely try it again - just made by Rick.

 

Sam and I got so much accomplished today - even a little work. He had a great day at orientation. I know this is going to be an awesome year for him! (I just realized he is already asleep on the couch at 7pm.)

 

Deb - I have such a big bottle of fish sauce, I could probably make ALL of the recipes! Paleo pad thai is another favorite of mine!!

Thanks, this is off the hook.  I like all of your up and coming IOD's.

Bear is like Jethro Bodine...Beverly Hillbillies.  He'll eat all of those body part things.  We have some. :P  :P 

I can't even touch them in the freezer or pick them up.  I use gloves.   We have heart, liver, tongue, kidneys...there's probably some other things I really don't want to know about.   "I can't unhear it or unsee it".   We even have oxtail.   I asked, isn't that like really having a "hiney" for supper?  :D  :P  :D  :lol:  :D

Yesterday was my first dual sport training day: 3-mile run in morning, 10-mile bike ride on the hills of beautiful Smith Mountain Lake state park. Felt great! Today I had dinner for breakfast (homemade guacamole on a burger) and breakfast for supper (sunny side up eggs atop butternut squash and shallot hash). 5/8-mile swim over lunch

Hi folks--just a quickie post now. Hubby just got home and mommy is taking a time out. Will respond and read more later--but for now:

The scales have fallen from my eyes! Truly, I thought I was good with whole food, unprocessed eating (albeit with grains, dairy, etc.). I was vegan for four years and was able to avoid animal products in Whole Foods no prob. However--no beef stock w/o sugar, no bacon w/o sugar, no sausages w/o dextrose. Seriously, I live 2 min from a HUGE WF. Also, no Red Boat fish sauce :-(.

Off to amazon and the interwebs I go!

Just fed my twins Nom Nom Paleo's roast chicken in a crockpot and baked sweet potatoes for dinner! For M1, they (and I) shared a scramble with spinach, tomatoes, mushroom, caramelized onions, and red/orange bell peppers. 22 months and they love veggies! However, Ruby spits out the peppers :-).

Deb, thank you for next week's ingredient list--I think I can get on the ball by then.

The day is ending well. Meal 3: not really hungry, but craving ... green things! Had some small smoked sausages (compliant), some white potatoes, one clementine, and broccoli with clarified butter and lemon juice. Yum. Not exhausted, no headache, ready to go read for a bit and then sleeeeeeep.

Books: This morning I heard about a book called "Potatoes, not Prozac," which I will read and give you all a review afterwards... it is related to the seratonin, depression, carbohydrates discussion.

How is it that I'm just learning of coconut manna now? Deb, I feel that you've been keeping a secret from us!

 

Joni and Ann - I also wasn't ready to stop after 30 days. I just didn't feel like I had the new habits ingrained yet. What you may not know is that Dave, Miki, Deb, Higs, Meadow - maybe some others - also did two in a row to start. I was lucky to meet them on their second go around :)

 

Spaghetti squash - I'm trying the carbonara tonight!

 

Some insights from my car ride with Sam yesterday (14 year old son): I just did not plan well! I ended up eating nuts for my protein/fat, which Sam pointed out to me that I said I was not going to do. I have to tell you - the nuts are wreaking havoc with my GI system. They have to go.  Sam told me he is just tired of the fast food from all the driving we've been doing. So we made a commitment to pack a cooler when we head back on Thursday. I was shocked by his insights and request, but glad to see him wanting to make better choices, too.

 

I went for a 5 mile run this morning. I clocked a great time even though my gut is suffering from yesterday's nuts! (You should know that I'm eating a small bag - maybe two servings - not eating them by the can :) )  I told Rick that Dawn's exercise schedule makes me look like I'm standing still. But, SO INSPIRING!!!

 

Sam is off to high school freshman orientation today. How can that be? He was just an 8th grader when we started this journey together!

Coconut manna rocks--it's good in mashed sweet potatoes. Used it a lot with twins combined with veggie and fruit purées. Don't recommend it in coffee, though--kinda gritty.

All........Sorry I have been absent but my business trip has been......all business! I am negotiating a $1.6 billion dollar contract which requires alot of focus and many hours. I am not trying to brag but only explain the magnitude of my assignment this week. Today was alot of screaming, huffing, and chest puffing. Tomorrow will probably be more of the same.

 

Dawner.......we are all good, I never thought anything but positive things for you or about you!

 

Deb.......thanks for stalking me and dragging me back to the group. YES everyone....Deb contacted me and told on all of you....she said that everyone was acting up, not listening, and not doing their chores. Your chore tomorrow is to declutter something....closet, drawer...whatever! You can all blame Deb.

Kat, noooo that giant WF in El Segundo doesn't have Red Boat? Booo on them. Are you ever in Long Beach? Looks like that WF has it (just looked on the Red Boat site). 

 

Here is my experience with the sugar free bacon at Whole Foods. It is totally there but it hides in plain sight. 

I couldn't find it for weeks at 3 different WFs and then I found it and it has been there all along. Sometimes its in a separate bacon fridge, a little away from the meat section. The brand is Pedersons and the packaging looks like this. The paleo friendly bit and the giant NO SUGAR is new - it used to be more discreet than that!

Deb, I tried that no sugar bacon and it was SOOO SALTY I couldn't eat it.  Alas.  There are lots of good compliant sausages to be found, at least.

 

Guess what:  spaghetti squash is in the oven as we speak!

 

I love the next round of IODs.  How is almost already week 2????

Higs that is interesting re bacon. I suck that shizz down - coupla packs a week!!!

I have a very salty palate though, I love salt. 

You do taste the salt more on the bacon in the absence of sugar. 

Costco also has a sugar free bacon, I haven't tried it. 

I can't find a compliant sausage to save myself. Ahhh but I am avoiding nightshade spices that could be the diffce. 

When I get around to it I'm going to have the butcher here make me a custom order. 

YAY FOR SPAG SQUASH. Fingers crossed.

Deb - are you sure that really shouldn't be spelled "awful" instead of "offal"?   :D  :P 

 

Why do they call it offal?   Isn't that what the intestines are called...like tripe? :P  :P 

 

Body parts and body functions....barf-o-rama.  :P   I'll need full body armor in the kitchen, oxygen, face mask and a motorcycle helmet.

Deb, I am excited for international week!  Maybe I will find a use for the goat meat still in the freezer.

 

Report on the spaghetti squash:  I think I overcooked it because it was super mushy.  Then I tried sautéing it in some lamb fat (leftover from the lamb burgers) and tossed in some spices.  It got more mushy.  So...  jury is still out.  It could be that I just don't really like squash (I tried butternut squash last W30 and it was gross).  I love summer squash and zucchini, but this other stuff - not so sure.

We will be making delicious chicken liver pate, we will be hiding some of our organs in burgers so we get the goodness without tasting it, we will make steak and kidney and, saute up some liver and onions. It will be AMAZING!

Oh, I'm used to it.   I'm glad she told on everybody.   I have sisters.  "Whatever you do, don't you tell anybody this".    Then they blather everything.  That's how families behave.  :lol:

Nanny - Steve does not have cancer.  He has a rare disease called Mylefibroisis, a disease of the bone marrow. Steve had a stem cell transplant which required chemo before the transplant to destroy all his bone marrow.  Without the transplant, Steve would not survive because his disease progresses to acute myeloid leukemia.  So happy to hear that you are a survivor.

Lazy MamaMiki pokes holes in spag squash...nukes for 5 to 7. Let cool, cut (I can't cut it raw), scoop out seeds, shred the rest. Then add it to dishes as you see fit. Ground chicken, coconut milk, thai spices & fresh basil, or tomato sauce, w30 pesto.
