Breakfast On The Go

My husband and I are considering starting the Whole30 program. Breakfast is our concern.  My husband eats breakfast in his car on the way to work 6 days a week.  Right now I make him muffins so that he's not eating processed breakfast bars, etc.  I've been praying about how to make this work for him.  He literally gets up, showers, grabs his food and is out the door.  There is no flex in his schedule.  Do you have any breakfast ideas for eating in the car?  I assume an RXbar for breakfast everyday is not a good idea.  This could be a make it or break it on whether or not we start the program.  Thanks

There are quite a few past discussions on this topic, Google something like whole30 forum breakfast to go and you should find them.

Breakfast casseroles are a good way to get in a full meal, since you put in eggs and lots of veggies, you could even bake avocado or olives into them, or have either on the side for a fat serving.

Salmon patties are a good option, they can be made ahead and either reheated or eaten cold. Pair with a creamy vegetable soup in a thermos, or raw vegetables cut up with some compliant mayo or ranch for dipping. Leftovers are a popular option as well, though how well they work in the car will vary.

I meal prep a breakfast hash each week and then throw it together every morning before work.

1lb homemade sausage (Nom Nom Paleo's Maple Sausage without the Maple)

1 bag Green Giant Rice Sweet Potato and Cauliflower

1 bag Green Giant Riced Butternut Squash

1 large yellow onion

1-2 bell peppers

Coconut Oil and/or ghee

Prep ahead : Brown and crumble sausage. I dice the onion and pepper and saute in oil. Once translucent I add the riced veggies and sausage. Store in an airtight container. Each morning I heat some hash in oil and crack and egg over it. Cook egg to my preference and scoop the whole thing into a cup to eat on the way to work (with a spoon, if you care to know). It is so delicious. I could eat this every single day. On the weekends I'll often have the same thing, but then also have a couple slices of bacon.

These options are compliant, but it really is best to try to get in protein, fat, and vegetables at every meal, and these options would really just be fruit and fat. They'd work if they were someone's only option, but they'll ultimately have better results with meals that meet the meal template.

If you google "whole30 omelet muffins" or "whole30 egg muffins", you'll come up with a ton of different recipes... then just browse through the ones that are marked as Whole30 or paleo, and remember to always check ingredients. There are so many variations out there, so it's just a matter of finding one (or a few) that meet your preferences.

Oh, and a warning:
Any time you look up "Whole30" in the same search as "muffins", you're also likely to run across things like these "banana bread drop muffins" that claim to be Whole30 but aren't -- the ingredients are compliant, but the recreation of baked goods is totally missing the point. So avoid that stuff, but definitely book mark it for sometime later on if something strikes your fancy ;) I still have a whole folder of stuff that I bookmarked during my first Whole30 (back in January this year) that I figured I'd "try eventually" and still haven't gotten around to doing... occasionally I go through and pare it down because I know I'm just not going to bother with some things, even though they struck me as very interesting while I was on-round.
