The other one sounds so vague that I can't comment on it, but hopefully someone else will. Try doing a search on this forum for siracha. When I was in SD over the holidays, my mom had 4 pepper plants (2 of them jalapeno) and 1/2 the plant was green, but she let some go to red. You'll get striations on them, but don't worry.
