Johnny M
This is better-than-mom's-meatloaf meatloaf. I have been experimenting for a while to get this right with no breadcrumbs and I finally nailed it! shannynh
This looks great! Can you taste the mushrooms at all? My husband has an issue with mushrooms...
Johnny M
honestly no...there is no mushroom taste I can detect at all.
Johnny M
but get them nice and finely chopped in your food processor. They're there for filling not for texture or taste!
megmac
Awesome...I have been disappointed with every paleo meatloaf I have tried. I'm going to try it this weekend. Thanks!
Johnny M
believe me i was too. I hope this one is a winner for you!
xacerb8
My kids are bitter that I'm not putting the usual BBQ sauce/ketchup glaze on the top of my meatloaf. Have to figure out how to duplicate that sweet kick without the honey.
Johnny M
The glaze I wrote up helps. It will never be the same but they might not care!
Sharon Simpson Thumann
I made this Wednesday night and had enough left over for Thursday dinner. It was really good. The only thing I changed was adding a couple of dates to the ketchup.
Johnny M
I would love the sweeten up the ketchup but I've been fighting the temptation. How were the dates?

Sharon Simpson Thumann
I would love the sweeten up the ketchup but I've been fighting the temptation. How were the dates? Not quite there but was close enough for an almost ketchup taste, I think after Whole90 is over I will try a tad bit of honey.
Krista Billows Rodriguez
You were not kidding! BEST ever meatloaf! This got rave reviews from my whole family last night, my 8 year old son begged for the leftovers for his lunch today and wants me to make more the ketchup. Nice job! Johnny M
I make a ton of the ketchup for dipping and am totally accustomed to the taste. I had real ketchup a couple weeks ago and couldn't stand the taste. I'm that kid that used to eat half the bottle of ketchup on everything. I feel less guilty with doctored up tomato paste. lindyj
My kids are bitter that I'm not putting the usual BBQ sauce/ketchup glaze on the top of my meatloaf. Have to figure out how to duplicate that sweet kick without the honey. I made a great BBQ sauce with applesauce as the sweetener, and my nephew thought it was great. I think it was from the It Starts With Food book. I spent the next week dipping chicken strips in it every chance I got.
CaseyD
The secret to making sweet, but sugarless ketchup is to make it straight from sweet, ripe tomatoes and removing the seeds (those are bitter). It is a pain in the butt to do, but if you do a big batch in the summer you can have it all year round. This meatloaf looks awesome! I will have to try it. lindyj
Tried this last night. It was awesome!! Had the parents and grandma over and no one was the wiser. My dad 'hates' mushrooms and didn't even pick up on them! Definitely a keeper. Thank you Johnny M!

Johnny M
did you let it cool 5-10 minutes? It definitely firms up after sitting a bit.
glimmer
Yeah, also wondering if I mis-converted something from US to metric. Next question : ) I asked on your blog but will pester you here too. How long would the sauce/ketchup keep do you reckon? I made up the rest of the tomato past I bought for this into sauce for my kids to use. Derval
Ah glimmer, if only those Americans would give up their ye olde weights & measures huh?
Johnny M
it should keep maybe a week? I've kept it for 4 or 5 days and it's been fine but realy it never lasts that long for me.
Evelyn Benchimol
AMAZING!!!! Made it into cupcakes though. Could not believe how moist they were. So much juice in the pan I poured over cut up leftovers. Kids loved them. Hubby told me he hates meatloaf so when he asked what it was I said beef cupcakes... even he was fooled and enjoyed dinner as well as leftovers for work lunches! One girl at work came over twice when I brought them (for breakfast one day, lunch another) asking what the awesome smell was. Won't bother testing other recipes!
