I was thinking of checking Trader Joes, but I haven't been able to get by there this week. I am like 75 miles from a Whole Foods, so that's out! I think I have seen prosciutto with some bad stuff in it. Sugar etc. I also think it won't be too hard to find the pork and salt version and I am pretty sure I have seen it at Trader Joes. Actually, that could be true when sourcing prosciutto from Parma or other regions in Italy, but I found it with Nitrates or Nitrites (I forget which) and they are not on my personal Whole30 or any other time list. I was lazy one day (every day) and microwaved the TJ's prosciutto to see if I could crisp it up for a salad. It worked if anyone wants to try it. Just let it sizzle up and then cool. Found a brand (busetto?) at Sam's too. Although, it'll vary what you can find by region it's my bacon substitute since I cannot find compliant bacon around here. You can consider it a fat or a condiment for the purposes of Whole30.
