GlennR Posted May 16, 2014 Share Posted May 16, 2014 Fried plantains, plantain fries, tostones (twice-fried plantains), pastelons (plantain lasagnas), plantain hash. If you google these phrases with the word "paleo," you'll get a ton of possibilities. We Filipinos have this coconut concoction called guinataan that has plantains, sweet potatoes, taro, and fruits cooked in coconut milk. It's normally sugar-laden, so I'm experimenting on how to make it Whole30 compliant. My first attempt was so close (I'm eating it right now), but not quite there yet. I'm done my whole 30 and allowed to eat potatoes but I like plantains a bit more, they don't make my blood sugar all crazy. I love the idea of making them into fries! I actually made it as the student instructed and it was very good. Boil peeled green plantains in salted water until soft. Then mash. It should be thicker than potatoes, but you can add some of the water it cooked in to thin it out. I also added salt and ghee. Top with fried eggs and fried or raw onions. The kid told me he also liked it with some sort of salami and fried cheese (queso blanco, he called it), but I skipped those parts. Maybe you could use a compliant sausage and some avocado to approximate. Add a side of greens (my version) and it's a meal! Link to comment Share on other sites More sharing options...

praxisproject Posted August 7, 2014 Share Posted August 7, 2014 Plantains are starchier and lower in sugar. Plantains are also higher in Vitamin A and potassium. After your Whole30, there are also some SWYPO recipes (don't look now). I like them most fried, with guacamole. The starch in plantains is much gentler on my blood sugar than any grain. I just got three plantains from a cooking class I attended at work, looking for ideas and that sweet, and salty combo sounds to DIEEEE for, adding it to my must make list!
