I LOVE the Plantanos Maduros in Well Fed and make them all the time. Here is a recipe from Melissa Joulwan's website: http://theclothesmakethegirl.com/2012/04/18/casa-muy-grande-plantains/

 

She also has a crazy good plantain nachos recipe in Well Fed 2. Highly recommend both cookbooks. Made my Whole30's delicious and fun!

Fried plantains, plantain fries, tostones (twice-fried plantains), pastelons (plantain lasagnas), plantain hash. If you google these phrases with the word "paleo," you'll get a ton of possibilities.

 

We Filipinos have this coconut concoction called guinataan that has plantains, sweet potatoes, taro, and fruits cooked in coconut milk. It's normally sugar-laden, so I'm experimenting on how to make it Whole30 compliant. My first attempt was so close (I'm eating it right now), but not quite there yet. When I've worked out the kinks, I'll share it in the Recipe section. It will be amazing: nutrient dense and delicious!

Ooh that sounds good. I actually got well fed for mother's day but haven't read the whole thing yet, I'll look for that recipe. I'm done my whole 30 and allowed to eat potatoes but I like plantains a bit more, they don't make my blood sugar all crazy. I love the idea of making them into fries!

When I was a teacher, a lot of my Dominican students told me their favorite food was Mangu.  I actually made it as the student instructed and it was very good.

 

Boil peeled green plantains in salted water until soft.  Then mash.  It should be thicker than potatoes, but you can add some of the water it cooked in to thin it out.  I also added salt and ghee. 

 

Top with fried eggs and fried or raw onions. 

 

The kid told me he also liked it with some sort of salami and fried cheese (queso blanco, he called it), but I skipped those parts.  Maybe you could use a compliant sausage and some avocado to approximate. 

 

Add a side of greens (my version) and it's a meal!

Plantains are starchier and lower in sugar. Plantains are also higher in Vitamin A and potassium.

 

After your Whole30, there are also some SWYPO recipes (don't look now).

 

I like them most fried, with guacamole. The starch in plantains is much gentler on my blood sugar than any grain.

I make plantain chips and top them with mashed avocado, spinach, smoked salmon and some homemade dill ranch. You can find the recipe here: http://www.fitisthenublack.wordpress.com. I also have the ranch recipe on there! So yum! I also love dipping them in guacamole! Or spread some cashew butter on them and top with a dried fig. Sweet and salty goodness!

That sounds delish!! I just got three plantains from a cooking class I attended at work, looking for ideas and that sweet, and salty combo sounds to DIEEEE for, adding it to my must make list!

I like this plantain beef pie from Stupid Easy Paleo http://stupideasypaleo.com/2013/04/16/paleo-plantain-beef-pie/. Some might consider this SWYPO because it's layered kind of like a lasagna, but I cook it. Then again, I never much cared for pasta dishes so it was not an issue for me. Just watch the label if you're using commercial green chilies.
