Derval Posted January 27, 2013 Author Share Posted January 27, 2013 Where'd the weekend go huh?? Day 21 (again, lol) 8.30am 2 boiled egg with 3 crispy bacon soldiers, dunk dunk yum. Small apple & pecan butter, cm coffee 12.45pm - rocket (arrugula) & tomato salad with balsamic, left over roast chicken wwith avo mayo, and bacon bits 3pm - some macadmaias & raisins while out being atheletics wife/mammy. Dh was running the Raheny 5 mile (pb of 29:17!) and ds did the 800m kids race - he was a bit pissed that he got boxed in by slower runners but he still came in amongst the top 50 of 350 8-12 yr olds (he's 9). A long cold wet windy day to the soundtrack of one whingy whiney 6 yr old dd. 6pm - Gyro burgers, sweet potato fries and paleo greek salad , oh and some more avo mayo- really enjoyed this meal! I did pop then under the grill after baking though as they didn't really brown up. I will pin that second recipe in my newly categorised paleo boards (a work in progress!) None in this house thank goodness....but I do find I have to put "leftovers" away beforehand or they'll get eaten at dinner. I'm used to grilling burgers so am interested to hear how the baked ones compare. I have beef for making some burgers today-wish I'd read your Gyro recipe first, I'd have bought lamb. Derval Posted January 28, 2013 Author Share Posted January 28, 2013 Well...first I put them on a baking sheet with parchment to bake them, but when I checked on them loads of liquid had come out - not nice - who wants boiled burgers? So I transferred them to the grill pan so they were raised up for the rest of the baking time - as I said they were a bit inspid looking at the end of cooking time so I blasted them under the grill to brown. But baking them did work - nice to just forget about them and they were cooking at the same time as the sweet potato fries. And I hate all the smoke that ususally accompanies grilling burgers! fyi Americans, grilling over here is what you call broiling! I think the one I had this morning tasted even nicer, so maybe a good one to make ahead to let all the seasoning develop. I'm making the kofta curry from mm today. Good to know about the grill pan working better than the parchment when baking the burgers, thanks. I haven't made that kofta-is it a slow cooker one? SummerGirl Posted January 28, 2013 Share Posted January 28, 2013 I had a look at that kofta recipe and I'm thinking I might do that instead with the beef mince I have-the only problem is I'd have to do it on high for 4 hours rather than low for 8 as I've run out of time! Wonder would it still be nice if cooked on high. It sounds like a more appealing dish for this cold windy day than the burgers/salsa/avo/salad combo I was planning! I'd say you could even do it in a casserole - brown the meatballs in the dish then pour on the sauce, cook on hob for hlaf an hour? like you would Italian meatballs? Derval Posted January 28, 2013 Author Share Posted January 28, 2013 Day 22 and another weekend behind me 7am - leftovers from last night - sweet potato fries, 1.5 gyro burgers, ghee fried egg. Cm coffee & half a banana. Delicous start to the day. 8.15am - GYM, usual shizzle 10.30 - cm coffee 12.30pm - leftover greek salad mixed with rocket, shawarma chicken, bacon bits, and the last of the avo mayo (which is now putty grey!) 5.45 - slowcooker kofta curry (will post recipe in recipe section) and cauli rice A good day Yesterday I made out a proper meal plan and corresponding shopping list. Hit the shops this morning & got everything for the next 5 days for surprisingly little. I also did very well in the "reduced to clear" fridge Picked up lamb ribs which I've never had before.
