Superbowl Food?

So, with the Superbowl coming up this weekend --- I wanted to see if anyone had any good recipes or ideas for compliant Superbowl foods. Rather than make a big dinner, I'll make a bunch of smaller finger foods to load up our plates with, so we still have the variety that all-afternoon snacking would provide, but will hopefully fit it into the meal template.

I'd like to make Whole30 twists on some of the traditional football foods, but I'm struggling to come up with more than a few:

  • Shredded buffalo chicken wrapped in a lettuce leaf (made homemade mayo last night, anyone know a way to get this to taste sort of ranch-dressingy?)
  • Sweet chili kale chips
  • Mini-meatballs in a compliant marinara sauce
  • Zucchini fritters
  • Deviled eggs

That's where I'm drawing a blank. I would love a few more recipes that are a little more veggie-oriented, although meat dishes are welcome also! :D

Baba Ganoush http://www.theclothe...ables-eggplant/ Could scoop it up with all kinds of veggies! Stuffed mushrooms, maybe a bunch of different types of olives marinated in herbs and olive oil? Cold poached shrimp with a compliant cocktail sauce or tartar sauce made from yummy compliant mayo?

I looooove stuffed mushrooms! So glad I was reading through here, I hadn't remembered to add stuffed mushrooms to my SuperBowl menu!

I was going to post this question this week! These all look yummy!

To turn our homemade mayo into Ranch Dressing, I add apple cider vinegar to taste, then coconut milk to thin. I add crushed garlic, dill, pepper, parsley, maybe some chives or Penzey's Fox Point seasoning...I really let my nose decide, and it always comes out yummy and will be great with Buffalo-style chicken! I'm sure there are more formal Ranch Dressing recipes out there, I'm just kind of a "dump and stir" person.

I'm thinking of making some tostones...I'm actually going to a pre-super bowl party on Saturday (basically an excuse to have a get together), lucky for me it will be one of my dairy re-intro days, but I still want to steer clear of chips, crackers, etc.

Johnny there is a compliant Chipotle. It's made by the Art of Chipotle and they even pre-blend the peppers and adobo sauce. I found it at my Whole Foods in California. Not sure if it's available across the country but here is there link. http://chipotlepeople.com/?p=319 It is both gluten and sugar free. I think it was 4.99 when I bought it, beats making my own or going without for 30 days. :)

Chicken Wings. Check out http://foodwishes.blogspot.com/2008/05/clifton-springs-chicken-wings-oven.html. I substitute almond flour for the regular flour and you may have to check the ingredients on the spices and hot sauces. I love this oven fried version because you don't have to babysit the wings during the party.

 

Pork Ribs - http://www.thecookingguy.com/cookbook/recipe.php?id=312 Ignore his bbq sauce recipe it is not compliant. But the way he cooks the ribs is awesome. I usually put Mr Stubbs rub on my ribs, then put them in the pan with vinegar, cover with foil and cook 90 min. Then you can dip them in whatever sauce you like. I don't even grill them, I just eat them right out of the pan. They are so good!

 

Coleslaw with a kick - This recipe is adapted from "The Low Carb Cookbook peppery coleslaw". Get a bag of shredded cabbage (if it has carrots in it it's even better) 4 Radishes chopped, 2/3 cup red onion finely chopped, 1/4 c Italian parsley chopped, 3 TBS fresh dill chopped. Mix all together in a large bowl.

Dressing - 1 cup homemade mayo, 3 TBS cider vinegar (make sure it is organic and not grain vinegar with apple flavor), 1 tsp sugar (leave out on whole 30), 1/4 tsp black pepper, 1/4 tsp hot pepper flakes, 1/2 tsp salt. Mix dressing and then add to coleslaw mix. You may need to add more cider vinegar. I make this about 1 hour ahead and store in the fridge until ready to eat. You can make it the day before but sometimes it can get soggy.
