Sweet potato hash browns! My usual method for hashbrowns is nothing fancy ... I just spiralize or shred the sweet potato, dump everything in a pan with coconut oil, and sprinkle black pepper and garlic powder over them! I should change it up, but it's SO easy and delicious!

I make a root hash with coconut oil (or bacon grease), sweet potatoes, parsnips, rutabagas, carrots, and onions. I saute the onions until caramelized, then remove them from the skillet. Then, I cook the carrots and sweet potatoes with a little water and the lid on for about 5 minutes. I take the lid off and let them begin to brown a little, then put the rutabaga and parsnips in. I cook them about 10 more minutes or until tender. Then I put the onion back in and I season with salt and pepper,parsley, a dash of oregano, and a dash of cayenne.

Yes. This is my favorite. It's as sweet and gooey as a decadent dessert.

 

I always bake extra, then there's many ways to eat them.

I bake them until they are almost done.  Let them cool and then refrigerate overnight.  I take the skins off, but you can leave them on if you like.  I slice them about 1/2 inch thick, sprinkle generously w cinnamon, and saute in ghee over medium heat until they caramelize and get crunchy.  It takes about 20 minutes and you have to watch them carefully so they don't burn. So good!  Vegetable "candy" :)
