They are truly amazing...better than white potatoes or sweet potatoes. You just cut them up, sprinkle with olive oil and a little salt and bake at 350. I just spiralize or shred the sweet potato, dump everything in a pan with coconut oil, and sprinkle black pepper and garlic powder over them! I should change it up, but it's SO easy and delicious! queenmelli Posted May 8, 2015 Share Posted May 8, 2015 I make a root hash with coconut oil (or bacon grease), sweet potatoes, parsnips, rutabagas, carrots, and onions. I saute the onions until caramelized, then remove them from the skillet. Then, I cook the carrots and sweet potatoes with a little water and the lid on for about 5 minutes. I take the lid off and let them begin to brown a little, then put the rutabaga and parsnips in. I cook them about 10 more minutes or until tender. JulieP757 Posted May 17, 2015 Share Posted May 17, 2015 I bake them until they are almost done. Let them cool and then refrigerate overnight. I take the skins off, but you can leave them on if you like. I slice them about 1/2 inch thick, sprinkle generously w cinnamon, and saute in ghee over medium heat until they caramelize and get crunchy.
